Crab bisque

Cooking time: 2 hours
Ingredients:

1 live stone crab
2 Granny Smith apples
1 head of celery
1 teaspoon of granary mustard
1 vanilla pod
2 lemons
100ml of extra virgin olive oil
1 small bunch of coriander
Salt to taste.

Ingredients for the bisque:
Crab shells
100g tomato puree
Butter
1 head of celery
2 onions
Brandy
2 carrots
200ml double cream
2 apples
fresh juice of a lemon
150ml white wine
Bay leaves
Whole black peppercorn
100g rice flour
The juice of 2 lemons
Salt and ground white pepper to taste.

METHOD
Fill a deep pan ¾ full with water; add the white wine, bay leaves and peppercorn and bring to boil. Add the live crab and let cook for about 20 minutes. Once cooked take out the crab and let cool down before extracting the meat.

Meanwhile in a thick-based deep pot add the butter and the chopped celery, onions and carrots; cook for 5 minutes add the crab shells and the apple cut in wedges. Add the brandy and flame. Add water and the tomato puree and let cook for 1 ½ hours. Strain the liquid, mix the rice flour with the cream and add to the cooking liquid. Season with salt, pepper and lemon juice.

Wash and thinly slice the celery then do the same with the apples. In a bowl mix the oil, mustard, vanilla seeds and lemon juice and zest. Pour on the apples and celery and mix with the coriander. Serve with the pan roasted lobster tail and bisque.

Grantham school joins Carol Service in celebration of town’s hospitalPupils from St Mary’s Catholic Voluntary Academy are taking part in the first Carol Service to celebrate the special relationship Grantham and District Hospital has with the town and surrounding communities.The school children will join in the singing of favourite Christmas Carols as well as perform their own set musical piece at the Carol Service on Thursday 11th December at 7pm, in St Wulfram’s church, Grantham.Deputy Head Teacher Olivia Mumford said: “The Carol Service is a fantastic opportunity for our pupils to share the joy of music while showing appreciation for the incredible work done at Grantham and District Hospital. It’s a privilege to support such an important event in our town."The Carol Service has been organised by United Lincolnshire Hospitals Charity, who work closely with staff at Grantham and District Hospital and provides those extras for staff and patients that NHS budgets are unable to fund.
