Game rillettes

Ingredients:

Game rillettes:
Confit
1kg mixed game
500g duck fat
200g carrot, roughly cut
150g onion, cut into quarters
4 bulbs garlic, lightly crushed
10 juniper berries, lightly crushed
20g thyme

Rillette base:
150g diced onion
25g chopped parsley
10g garlic pureed
10g thyme leaves, chopped

Carrot gel:
200g chopped, peeled carrot
200g water
200g white wine vinegar
80g sugar
12g salt
3g mustard seeds
2.5g black peppercorns
1.5g coriander seeds
5 bay leaves

Pickled mushrooms:
600g mixed wild mushrooms
200g water
200g white wine vinegar
80g sugar
12g salt
3g mustard seeds
2.5g black peppercorns
1.5g coriander seeds
5 bay leaves

METHOD
Gas 2, 120°C. Place all the ingredients for the confit into an oven proof dish, cover and cook in the oven for 2 hours, until very tender. Remove the game from the fat and leave to cool a little. Discard the veg. Using one-third of the fat slowly cook the onion and garlic until soft. Flake the meat when it’s warm enough to handle and work in the fat mix. Add the herbs and season well.

Lay two layers of cling film on a flat surface and add the mixture, wrap with the cling film and roll like a thick sausage. Refrigerate for 4 hours.

Slice and serve with toasted focaccia slices and sautéed fresh cranberries in butter.

METHOD FOR CARROT GEL:
Place all ingredients – except for the carrots – into a pan and bring to the boil, leave for 10 minutes, then strain. Put the carrots into the vinegar mix and boil until the carrots are nearly dry. Puree the carrots and pass through a sieve.

METHOD FOR PICKLED MUSHROOMS:
Place all the ingredients except for the mushrooms in a pan and bring to the boil. Clean and prepare the mushrooms into desired size. Pour the hot mix over the mushrooms, when cool leave in the fridge overnight. Strain the mushrooms and discard the vinegar mix.

Grantham school joins Carol Service in celebration of town’s hospitalPupils from St Mary’s Catholic Voluntary Academy are taking part in the first Carol Service to celebrate the special relationship Grantham and District Hospital has with the town and surrounding communities.The school children will join in the singing of favourite Christmas Carols as well as perform their own set musical piece at the Carol Service on Thursday 11th December at 7pm, in St Wulfram’s church, Grantham.Deputy Head Teacher Olivia Mumford said: “The Carol Service is a fantastic opportunity for our pupils to share the joy of music while showing appreciation for the incredible work done at Grantham and District Hospital. It’s a privilege to support such an important event in our town."The Carol Service has been organised by United Lincolnshire Hospitals Charity, who work closely with staff at Grantham and District Hospital and provides those extras for staff and patients that NHS budgets are unable to fund.
