Superfood soup

Ingredients:

Some olive oil
4 banana shallots – thinly sliced
2 sticks of celery – sliced
1 fennel bulb – diced
Seasoning – I used salt, pepper and fresh thyme
2 cloves of garlic – crushed
6 mini leeks – trimmed and chopped
A handful of tender stem broccoli – chopped
6 Brussels sprouts – quartered
1/2 courgette – halved lengthways and then sliced
8 large cavolo nero leaves 60g peas
One bunch of fresh rocket
1 ltr good quality vegetable stock
40g pearl barley

Heat the olive oil in a pan on a medium to low heat and throw in the shallots, celery and fennel. Stir well and let them sauté for a good 5 minutes until they begin to soften, then stir in the garlic and leeks and plenty of salt and pepper along with some fresh thyme and let them all gently sauté for another 5 min.

Add the broccoli, courgette and Brussels sprouts and let them sauté with the rest of the veg; then add the cavolo nero on top, place the lid on and let the whole thing sweat for another 5 min.

Pour in the stock, then add the peas, rocket and pearl barley, stir well and let it gently bubble away for 20 min. Finally, take it off the heat and let it cool for 5 minutes before serving. 

Grantham school joins Carol Service in celebration of town’s hospitalPupils from St Mary’s Catholic Voluntary Academy are taking part in the first Carol Service to celebrate the special relationship Grantham and District Hospital has with the town and surrounding communities.The school children will join in the singing of favourite Christmas Carols as well as perform their own set musical piece at the Carol Service on Thursday 11th December at 7pm, in St Wulfram’s church, Grantham.Deputy Head Teacher Olivia Mumford said: “The Carol Service is a fantastic opportunity for our pupils to share the joy of music while showing appreciation for the incredible work done at Grantham and District Hospital. It’s a privilege to support such an important event in our town."The Carol Service has been organised by United Lincolnshire Hospitals Charity, who work closely with staff at Grantham and District Hospital and provides those extras for staff and patients that NHS budgets are unable to fund.
