GET FIRED UP FOR THE BBQ SEASON
The School of Artisan Food based at the Welbeck Estate runs courses designed to educate on the art of barbecuing and food smoking.
Everyone hears of or experiences the horrors of burnt sausages or undercooked chicken at least once each summer. The Fire & Smoke – BBQ Cooking course, led by expert butcher Chris Moorby along with his son Tom, lasts one day and is aimed at those wanting to avoid these common mistakes and become a master of alfresco dining.
Very much a hands-on experience, the attendees are given a light breakfast and lunch because later everyone will sit down to share the BBQ food they have made and cooked. This is an informal and enjoyable day with lots of banter amongst the group. To start two sauces/marinades are prepared; a classic BBQ sauce and secondly a chimichurri sauce, both recipes created by Tom Moorby.
Chris guides the group through making their own Argentinian BBQ sausages, including the mincing and forming the Cumberland sausage shape. After lunch and a talk on selecting which charcoal and woods to use for particular effects, such as hot or cold smoking, a Jacob’s Ladder of smokey ribs was made. Tom and Chris are experts at showing the versatility of outdoor cooking, preparing a ‘Dirty’ fillet steak directly on the coals, demonstrating beer can chicken and spatchcock poussin.
It was not meat all the way – recipes for stuffed sea bass, salmon parcels and vegan sweetcorn skewers were also shared and a last tip for the budding BBQ maestros was to place a foil tray of brownie mix on the coals to cook while guests enjoyed their first courses.
The one essential piece of equipment which was recommended, apart from a BBQ of some shape or size, was a meat thermometer. A great investment for any cook, it takes away any doubt about that undercooked chicken and the associated risks. LOW ‘N’ SLOW SMOKED BEEF SHORT RIBS

Ingredients:
Beef Short Ribs – preferably from your local butcher
Brine consisting of 1kg water, 100g salt, 50g sugar (or proportionate quantities for amount of ribs)
Honey to glaze
METHOD
• Immerse ribs in brine overnight
• Remove ribs from brine and pat dry
• Hot smoke ribs for 8 hours at 120°C
• Glaze with honey and char on BBQ

PULLED PORK SRIRACHA JALAPENO POPPERS
Ingredients:
10 jalapeno peppers (or more as needed)
10 oz prepared pulled pork
3 tbsp Sriracha sauce, plus more for topping
1 tbsp chilli powder
3 cloves garlic, minced
½ cup shredded Cheddar cheese
METHOD
• Preheat oven to 350 degrees
• Slice the jalapeno peppers in half and scoop out the insides. Set aside
• Add the pulled pork to a mixing bowl, stir in the Sriracha, chilli powder and garlic and mix well
• Stuff each jalapeno half with the spicy pulled pork mixture
• Top each with cheese and set onto a lightly oiled baking dish
• Bake for 20 minutes
• Remove from oven
• Top with extra Sriracha if desired, and serve
