Air fryer buttermilk fried chicken, sour cream & hot sauce

• 12 chicken thighs, skinless and boneless, cut into 2
• 200ml buttermilk
• 1 egg, beaten
• ½ tsp mustard powder
• 1 tsp sea salt
• 1 tsp freshly ground black pepper
• Vegetable oil, for deep-frying

For the seasoned flour:
• 300g plain flour
• 1 tbsp dried oregano
• 2 tbsp sweet smoked paprika
• 1½ tsp baking powder
• 1 tsp cayenne pepper
• ½ tsp onion granules
• 2 tsp garlic powder/granules
• 1 tsp sea salt
• 1 tsp freshly ground black pepper

To serve:
• 200ml sour cream
• 1 tbsp hot sauce
• 1 lime, cut into wedges

For the prawn toast:

Serves: 4

• 200g raw prawns, peeled and cleaned
• 1 garlic clove, roughly chopped
• 1 tsp finely grated ginger
• 1 egg white
• 2 tsp sesame oil
• 2 tsp golden caster sugar
• 2 tsp soy sauce, plus extra to serve
• 3 spring onions, very finely chopped
• 3 slices white bread
• 100g sesame seeds
• Vegetable oil, for drizzling
• Sweet chilli sauce, to serve

Method:
Cut the chicken thighs in half lengthways and place in a bowl with the buttermilk, egg and mustard powder and season with the salt and pepper. Cover and put into the fridge to chill for about an hour.

In a separate bowl, mix together all the ingredients for the seasoned flour.
Remove the chicken from the fridge and toss the chicken pieces in the seasoned flour, one piece at a time.

Heat the air fryer to 190°C and cook the chicken pieces in the air fryer for 6-8 minutes until the chicken is cooked and golden.

Serve immediately with the sour cream, hot sauce and lime wedges.

Method for prawn toast:
Put the prawns, garlic, ginger, egg white, sesame oil, sugar, soy sauce and spring onions into the bowl of a food processor and blitz to a paste. Tip the paste into a bowl, cover and chill for 30 minutes.

Divide the paste evenly between the 3 slices of bread and, using a flat knife, spread the paste over the bread, right to the edges. Sprinkle the sesame seeds over the top of the paste, gently pressing them into the paste. Drizzle with a little vegetable oil and cut the slices into quarters.

Heat the air fryer to 200°C and cook the prawn toast for a couple of minutes on each side until golden and the paste is cooked through.

Serve immediately with a little sweet chilli sauce.
