Summer Berry “cheat’s” ice cream

• 300ml double cream
• 4 tablespoons Opies Summer Berry Compote

Dominic Franks shares a quick and easy recipe for a delicious ice cream treat for warm summer days.

Ice cream is always glorious for this time of year, but it can actually be a bit of a drag to make.

However, this summer berry ice cream is a bit of a “cheat’s” ice cream because I use a jar of Opies ready made Summer Berry Compote and some shop bought custard instead of making my own.

To be honest, it tastes so good you would never know and quite frankly who has the time to faff around with eggs and a bain-marie, particularly in this heat? I think the shop-bought custard adds an ‘old fashioned’ element to the taste which I simply adore.

Method
• This wonderfully refreshing ice cream also takes no longer than 10 minutes to make if you have one of those ice cream makers or churning bowls. I have a brilliant one which is attached to my Smeg stand-mixer, but you can simply freeze the liquid in a plastic container for a couple of hours and it will do just as well.

• Place all the ingredients into a bowl and whisk together for a few minutes until fully combined and gloriously pink.

• Pour the mixed liquid into the ice cream mixture and churn for 10 mins or until the ice cream begins to set. Transfer it to a container and store in the freezer until you’re ready to serve!

• Eat and of course, enjoy!
